Parsons brews a long, changing list of ales and lagers in Prince Edward County: hazy IPAs like Metal, Rocket and Clouds, the golden ale simply called "BEER", Brown is the New Black Lager, the 8-Ball Milk Stout, a Belgian Tripel, fruited sours and bourbon-barrel-aged stouts such as Devil's Right Hand, plus a Twelve Stouts of Christmas box and a beer advent calendar.
Parsons's packaged beer (HTS 2203.00.00, "Beer made from malt") can no longer ship to the US: the US import ban on listed Canadian alcohol took effect September 29, 2026, after a 50% Section 338 duty that applied from August 22, 2026. Brewed at the family farm brewery at 876 County Rd 49, Picton, where the Picton Gazette reported the brewery planted barley on site and that "55 per cent of our brewing ingredients are from Ontario"; its Farmer's Tan Harvest Ale used hops from Pleasant Valley Hops in Hillier and local barley.
